If you can be a severe diabetic, perhaps this cake is not okay for you. But for the majority of diabetics, those whose blood sweetener is below control, or those with pre-diabetes who are watching their sweetener intake, this cake is generally okay. Whether you own severe diabetes, instead of creating use of the 1/2 the sweetener cake mix, use a specialty sugar-free simple cake mix. And a reminder to all of us diabetics, everything in moderation. Hold a piece of cake, not 1/2 a cake!!
DIABETICS 7 UP CAKE
1 crate 1/2 cake boxes cake mix
1 crate (4-serving size) sugar-free instant lemon pudding mix
10 ounces diet 7 Up soda
3/4 cup canola oil
4 eggs, separated
Preheat stove to 350 degrees. Lightly grease and wheat 3 8-inch round cake pans; set aside.
In a moderate mixing container combine the cake mix, pudding mix, 7 Up, canola oil, and the 4 egg yolks. Blend mix on little velocity of electric mixer until combined. Beat on moderate velocity for 3 minutes.
In a 2nd bowl, beat the egg whites until they can be stiff. Gently fold into the cake combine mixture. Pour batter into the prepared pans. Location pans in stove and fry at 350 degrees for 30 to 35 periods or until a wooden toothpick inserted within the center returns out clean. Remove from stove and cold in pot for 4 to six minutes. Remove from pans and cold completely on wire racks.
FILLING:
1 cup evaporated milk
1 cup Splenda granular
3 egg yolks
1 stick butter
1 tsp vanilla
1 tiny can crushed pineapple in its own juice, drained
1 can unsweetened coconut
Combine the evaporated milk, Splenda granular, egg yolks, and margarine in a 2-quart saucepan. Stir together over little heat until blended. Bake over moderate heat, stirring frequently, until the mix thickens; 10 to 12 minutes. Remove from heat and sum vanilla, pineapple, and coconut. Stir to blend well. Location one cooled cake layer on serving platter. Top with one-third regarding the filling and spread over the top regarding the layer. Repeat the process with the 3 remaining layers and remaining filling ending with the filling.
NOTE: This cake does have some sweetener so have accordingly.
